From Side-Streams to Solutions: EIT Food Challenge Labs 2025

The EIT Food Challenge Labs 2025 – Beyond the Pea at the Latvia University of Life Sciences and Technologies (LBTU) brought together 23 participants in eight teams to develop sustainable, market-ready solutions from pea processing side-streams. Teams addressed real-life challenges set by ASNS Ingredient, creating innovative concepts such as plant-based paints, microbiome-integrated horse bedding, biodegradable seedling pots, and eco-friendly packaging materials. Challenge Labs is an EIT Food initiative aimed at improving food systems by bringing together students, scientists, entrepreneurs, and professionals to co-create innovative solutions.

South East European University (SEEU) continues to demonstrate its leading role in academia through the achievements of its professors. For the sixth consecutive time, the Pro-Rector for Research, Planning and Entrepreneurship, Prof. Dr. Veland Ramadani, has been ranked among the world’s Top 2% most cited researchers, according to the prestigious evaluation conducted by Stanford University in collaboration with the scientific publishing house Elsevier.
